Mac Vaucher is the manager of HWL Meats, and Austin Lehenbauer is the grandson of Harry Lehenbauer, the owner of the farm. Harry owns over 1,000 acres of land in Hatton, MO. They raise buffalo, steer, goat, lamb and swine. Each group of animals usually has a protector animal such as a llama, donkey or dog to protect the herd from predators like coyotes. Buffalo is their most unique and sought after meat with 20 head in the herd. Each animal yields about 650 pounds of usuable meat, and the turnover is one per month.
